I have a handy piece of shareware that solves this problem. It's an ImageWriter resource called, appropriately, "Even/Odd ImageWriter." It lets you choose odd or even page printing from the printer dialog. According to the docs, there's also a LaserWriter version available.
This version is from 1987; I don't know whether the author, Michael Noel, is still at the listed address (I'm just getting around to deciding what shareware to keep, and paying the fees :-). This came from an old Jasmine hard drive.
